Su Böreği Recipe (Turkish Boiled Pastry)
Ingredients:
•Dough:
•6 eggs
•1 tea glass of water (about 100 ml)
•1 teaspoon salt
•5-6 cups all-purpose flour (add gradually)
•Filling:
•500 grams of white cheese or ricotta cheese
•1 bunch of parsley (finely chopped)
•Salt (optional, depending on the saltiness of the cheese)
•For Brushing:
•250 grams of butter
•1 cup of milk
Instructions:
1. Prepare the Dough:
•In a large bowl, mix the eggs, water, and salt.
•Gradually add flour until you obtain a firm, non-sticky dough.
•Knead the dough for 10 minutes and cover with a damp cloth. Let it rest for 20 minutes.
2. Roll Out the Dough:
•Divide the rested dough into 10 equal pieces (bezeler).
•Roll each piece into thin sheets using flour to prevent sticking.
•Larger sheets will result in a more delicious börek.
3. Boil the Sheets:
•Boil water in a large pot and add a pinch of salt.
•Prepare a large bowl of cold water.
•Boil each sheet for 1-2 minutes, then immediately transfer to the cold water.
•Place the boiled sheets on a clean kitchen towel and remove excess water.
4. Layer the Börek:
•Grease a baking tray with butter.
•Place the first boiled sheet dry at the bottom of the tray.
•Brush it with a mixture of melted butter and milk.
•Place the second boiled sheet on top and brush again with the butter-milk mixture.
•Repeat with the third and fourth sheets.
5. Add the Filling:
•Mix the cheese and chopped parsley for the filling.
•Spread the filling evenly over the fourth sheet.
6. Complete the Layers:
•Continue layering the remaining sheets over the filling, brushing each layer with the butter-milk mixture.
•Place the final sheet dry on top and pour any remaining butter-milk mixture over it.
7. Bake:
•Preheat the oven to 180°C (350°F).
•Bake for about 45 minutes, or until the top is golden brown.
•Let the börek rest for 10-15 minutes before slicing.
